Soy Meat Soboro Don

Soboro Don is your go-to Japanese comfort meal! With seasoned Minced Aftermeats, scrambled eggs, and green vegetables on top of fluffy steamed rice, this three-color rice bowl is effortlessly easy to pull together and full of flavor. 

Ingredient

Serving for 4:

100g Dry Aftermeats Meat *Mince type

1 cup Mixed Vegetables (e.g. Carrot, Peas and Corn) *you can add more
1 tablespoon Oil for cooking
Cooked Rice to serve
1 Spring Onion *finely shopped

Marinade
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 small piece Ginger *grated
1 teaspoon Potato Starch
2 teaspoons Sesame Oil OR Oil of your choice
*Note: You can add some grated Garlic as well.

Sauce
1 tablespoon Sugar
2 tablespoons Soy sauce
2 tablespoons Sake (Rice Wine) OR Water
1 to 2 teaspoons Toban Djan (Chili Bean Sauce)

Preparation

  1. Soak Dry Soy Meat in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from Soy Meat. It might be unnecessary, or you wish to repeat a few times.

  2. Place squeezed Soy Meat in a bowl. Combine the Marinade ingredients in a small bowl, pour over the Soy Meat, and mix to combine well.

  3. In the small bowl that you just used, combine the Sauce ingredients.

  4. Heat Oil in a frying pan over medium heat, cook mixed Vegetables. When the Vegetables are cooked, add Soy Meat, and stir-fry for a few minutes. Add the Sauce, and stir to combine.

  5. Half fill a bowl with warm cooked rice and cover it with the mixture. Add some finely chopped Spring Onion, and enjoy.
